Our Identity

We are PaddingtonCellars

A specialist consultancy rooted in South Africa’s wine lands. We work with private collectors, estate owners, and tourism developers who value depth over hype — people who want to understand a vintage, build a cellar with purpose, or create a visitor experience that reflects the place itself.

Our tone is direct, informed, and unhurried. We don’t sell shortcuts. We share what we know from decades of tasting, storing, and walking vineyards from Stellenbosch to Franschhoek.

For Collectors

Cellar audits, acquisition guidance, and storage assessments built around your existing taste and space constraints.

For Estates

Cellar management systems, staff training, and direct-to-trade logistics that respect a producer’s scale and style.

For Tourism Developers

Viticulture trail design, tasting room programming, and regional storytelling that turns a visit into a genuine wine education.

Practical services for wine professionals

Each offering is built around real vineyard conditions, cellar logistics, and visitor experience — not theory.

Cellar management consulting

We audit your current storage setup — temperature zones, humidity control, racking layout — and recommend changes that reduce spoilage risk and improve bottle accessibility. Recent work includes a 2,000-bottle passive cellar in Paarl and a temperature-controlled room in Constantia.

  • Inventory rotation and condition reports
  • Temperature mapping across storage areas
  • Cost-effective retrofit recommendations

Wine education programs

Structured courses for hospitality teams and private collectors. Sessions cover South African classification systems, blind tasting technique, and food pairing logic. Each program is tailored to the group's existing knowledge — from front-of-house staff to enthusiast clubs.

  • Half-day and full-day workshop formats
  • Focus on Chenin Blanc, Cabernet, and Méthode Cap Classique
  • Blind tasting grids and regional maps included

Viticulture tourism development

We help estates design visitor experiences that reflect their actual winemaking calendar. From harvest-season open days to structured cellar tours with tasting flights, the goal is to match guest expectations with the working rhythm of the vineyard.

  • Seasonal itinerary planning for small groups
  • Staff training for cellar door hospitality
  • Logistics coordination with local tourism partners

Our Story

From a single cellar to a trusted name in South African wine.

2008

The First Vintage

Founded in Stellenbosch, PaddingtonCellars began as a small consulting practice focused on cellar inventory management for three family-owned estates. The early years were about building trust — learning the rhythms of each vineyard and understanding the specific challenges of aging wine in the Cape’s variable climate.

2013

Education & Tourism

We launched our first structured wine education program, initially a weekend course for hospitality staff in Franschhoek. The curriculum grew into a series of accredited modules covering viticulture basics, sensory evaluation, and cellar hygiene. That same year, we began advising on wine route development for emerging tourism initiatives in the Breedekloof region.

2018

Regional Reach

Our client base expanded beyond Stellenbosch to include producers in Robertson, Swartland, and the Elgin Valley. We introduced a seasonal booking workflow for cellar tours that reduced scheduling conflicts by 40% for participating estates. The team grew to five full-time consultants, each with a focus area: red varietals, sparkling method, or direct-to-consumer sales.

2023

Client Onboarding Portal

We built a dedicated client portal to streamline how new estates join our consulting network. The platform centralizes documentation, cellar audits, and seasonal planning. Within its first year, the portal cut average onboarding time from three weeks to eight days. Today, PaddingtonCellars works with over thirty estates across five wine regions.
